Flourless Chocolate Protein Doughnuts with Blueberry Icing

Ingredients:

For the doughnuts:
  • 100g plaintains
  • 2 scoops of Complete by Juice Plus+ chocolate
  • 3 tbsp cacoa powder
  • ½ tsp baking soda
  • 2 tbsp coconut oil
  • 3-4 tbsp water 
For the blueberry icing:
  • ½ cup blueberries
  • ½ cup coconut butter
  • ¼ tsp organic vanilla powder
  • 1 tsp acai powder 

Extra toppings: 
  • Crushed pistachios and goji berries 

Method:

  1. Preheat the oven to 190°C.
  2. Place the peeled plantains and remaining ingredients into blender and blend until smooth.
  3. Grease the doughnut tin (we chose a mini size one), then spoon the batter into each doughnut mould.
  4. Bake for about 11 minutes.
  5. Allow to stand for ten minutes before removing from the tin.

To make the icing:

  1. Mix all the icing ingredients together until it’s super smooth.
  2. Spread icing onto cooled doughnuts and top with crushed pistachio pieces or goji berries.
