Couscous Salad In A Jar
Ingredients:
- 100g Couscous
- 1 teaspoon Harissa
- 1 pepper
- 1 packet of Juice PLUS+ soup
- 1 handful of chickpeas
- 6 cherry tomatoes
- Handful of arugula
- 8 slices courgette
- A small onion, finely chopped
- ½ lime
Directions:
- Mix the couscous, chickpeas, tomatoes, arugula, zucchini and onion in a sealable glass jar (e.g. a mason jar that can hold about 0.75 ml to 1L.)
- Season with Harissa and pepper.
- Put the lime on top.
At the Office:
- Bring your prepared dish to the office along with the Juice PLUS + soup packet.
- When you are ready to eat at the office, squeeze the lime over your meal.
- Prepare the soup with 250ml of boiling water and pour into your dish - so that the couscous is covered. Shake.
- Let it sit for 20 minutes.
- Eat!
