Juice PLUS+ Zucchini Muffins

For approximately 6 Muffins
 

Ingredients

  • 2 medium sized zucchinis
  • 2 eggs
  • 1 Pack Juice PLUS + Complete Vegetable Soup
  • 2 tablespoons spelled flour
  • Salt and pepper 

Instructions

  1. Preheat oven to 190 ° C / 375 ° F
  2. Wash zucchini and slice into sticks. 
  3. Wrap the zucchini in towel and squeeze out water. 
  4. Stir in eggs, Juice Plus + Complete Vegetable Soup and flour with a fork; add salt and pepper then mix everything well. 
  5. Scoop into muffin tins and bake for about 25 minutes, until the muffins have a lightly browned top. 
  6. Leave muffins to cool then enjoy!
