Valentine's Recipe - for first dates!
Ingredients:
- 2 medium courgettes (spiralised)
- 10 cherry tomatoes (halved)
- Sea salt
- Red chili flakes
- 1/2 cup (Green Kale) Pesto
- Extra olive oil & nutritional yeast
For the Green Kale Pesto:
- 1 bunch of kale
- Juice of 1 lemon
- 1 clove of garlic, peeled
- 1⁄4 cup of extra virgin olive oil
- 1 tablespoon of nutritional yeast (optional)
Directions:
- For the Green Kale Pesto, add all ingredients into a blender and blend on high until smooth. Set aside.
- Heat the olive oil in a non-stick pan on medium heat.
- Add the cherry tomatoes halves, toss with olive oil, a pinch of salt and a pinch of red chilli flakes.
- Add spiralised courgette spaghetti, add half kale pesto and saute on medium-high heat for 1-2 minutes, then add in the remaining kale pesto and saute for a further minute.
- Divide the mixed greens into two plates, drizzle of olive oil, and add another sprinkle of nutritional yeast.
