Flourless Chocolate Protein Doughnuts with Blueberry Icing
Ingredients:
For the doughnuts:
- 100g plaintains
- 2 scoops of Complete by Juice Plus+ chocolate
- 3 tbsp cacoa powder
- ½ tsp baking soda
- 2 tbsp coconut oil
- 3-4 tbsp water
For the blueberry icing:
- ½ cup blueberries
- ½ cup coconut butter
- ¼ tsp organic vanilla powder
- 1 tsp acai powder
Extra toppings:
- Crushed pistachios and goji berries
Method:
- Preheat the oven to 190°C.
- Place the peeled plantains and remaining ingredients into blender and blend until smooth.
- Grease the doughnut tin (we chose a mini size one), then spoon the batter into each doughnut mould.
- Bake for about 11 minutes.
- Allow to stand for ten minutes before removing from the tin.
To make the icing:
- Mix all the icing ingredients together until it’s super smooth.
- Spread icing onto cooled doughnuts and top with crushed pistachio pieces or goji berries.
