Couscous Salad In A Jar

Ingredients:

  • 100g Couscous
  • 1 teaspoon Harissa
  • 1 pepper
  • 1 packet of Juice PLUS+ soup
  • 1 handful of chickpeas
  • 6 cherry tomatoes
  • Handful of arugula
  • 8 slices courgette
  • A small onion, finely chopped
  • ½ lime

Directions:

  1. Mix the couscous, chickpeas, tomatoes, arugula, zucchini and onion in a sealable glass jar (e.g. a mason jar that can hold about 0.75 ml to 1L.)
  2. Season with Harissa and pepper.
  3. Put the lime on top.
At the Office:
  1. Bring your prepared dish to the office along with the Juice PLUS + soup packet.
  2. When you are ready to eat at the office, squeeze the lime over your meal.
  3. Prepare the soup with 250ml of boiling water and pour into your dish - so that the couscous is covered. Shake.
  4. Let it sit for 20 minutes.
  5. Eat!
