Stuffed Mushrooms
Ingredients
- 16 mushrooms
- Olive oil
- Salt and pepper
- 2 big onions
- 3 garlic cloves
- 1 red bell pepper
- 100g cottage cheese
- 100g feta
- 2 sachets Juice PLUS+ Complete Vegetable Soup
Preparation
- Preheat the oven to 195°C
- Cut off the mushroom stalks and clean the insides.
- Chop onions and garlic.
- Wash bell pepper, remove insides and chop the rest.
- Heat olive oil in a frying pan.
- Fry onions and garlic cloves.
- Then mix in mushrooms and bell pepper.
- Add salt + pepper to taste.
- Stir in Juice PLUS+ Complete Vegetable Soup.
- Take the pan off the heat and add in the cottage cheese and feta.
- Fill mushrooms with the vegetable and cheese filling.
- Place in the oven for 20 minutes.
- Serve and enjoy!
